is there a document anywhere that has definitions for all the Yamaha ecu tables?

explanations of what the numbers in the cells mean?

a glossary or terminology list?

We do not have this, we simply unlock everything to give you the ability to tune yourself. What you do with that is up to you. If you have specific questions you can't find answers to, then you will need to ask.
